Restaurant and bar fit-out

Commercial kitchens, servery joinery and front of house, delivered to a launch date that has already been published.

We understand that no two restaurants or bars are the same, and we focus on delivering one-to-one, high quality service on each one. JPS has delivered three sites for Gordon Ramsay Restaurants - Liverpool, Ealing Broadway and Reading - covering the full envelope from commercial kitchen installation through to the last piece of loose furniture, and we work for large scale bar operators and independents alike.

Hospitality programmes are unusually unforgiving. The opening date is normally fixed before the contractor is appointed, staff are recruited against it, and bookings open against it. We sequence the works backwards from that date, front-load the long-lead kitchen and MEP items, and hold the finishing trades to a snagging standard that lets the operator trade on day one.

A bar lives or dies on its servery. Drainage, ice, glass wash, speed rails and till positions are all resolved before the finish is chosen, because a beautiful bar that slows the staff down costs the operator money every night it trades. We build the bar itself as bespoke joinery, integrate the lighting and AV into it, and coordinate the MEP that sits behind it. Where a site sits beneath residential units, acoustic separation and extract routing are resolved before any finish is specified.

How the job runs.

  1. Front-load the kitchen and the servery

    Extract routes, gas, drainage, cold rooms and cellar cooling are the items that decide the programme. They are surveyed, ordered and installed first, so the fit-out of the room happens around a kitchen and a bar that already work.

  2. Build front of house as joinery

    Bars, back-bars, banquettes, host stands and servery counters are made off site and integrated with the lighting, AV and speed rails before they arrive, which keeps the trades off each other in a room that is usually not large.

  3. Open on the published date

    Bookings open against the launch date before we are appointed, and staff are recruited against it. Everything is sequenced so the operator trades on the first night, with everything cold that should be cold and the snagging standard set to that, not to a defects period.
